@kalev : Thanks for the information ! Well, then you can't do much about it of course. What a bad decision from upstream ... they could have provided an option to Enable/Disable the Select All functionality at least.
Loss of Select All functionality negatively impacts my daily workflow. I can't recall a crash from using it to regularly copy thousands of lines of text, so I'd say this regression makes the update not generally functional for me.
OK, so Fedora Workstation WG discussed this in today's meeting and decided to revert this change. I've gone ahead and done that in vte291-0.62.3-1.fc33 build, FEDORA-2021-06919b9f73

This update breaks the "Select All" functionality in a terminal - selected gets only the currently visible part of outputs.
Bodhi is disabling automatic push to stable due to negative karma. The maintainer may push manually if they determine that the issue is not severe.
